The Pioneer Shiraz
Wine
Taylors The Pioneer Shiraz honours Bill Taylor, who early on recognized the emerging popularity of Shiraz and insisted on planting a small block alongside their Cabernet. The wine is a tribute to his pioneering spirit.
The grapes are destemmed, chilled and cold soaked. Fermentation occurs in new headless American oak barrels, receiving hand plunging twice daily.
After extended skin contact the wine is pressed, racked off gross lees and returned to the same barrels for malolactic fermentation. Maturation occurs in a selection of fine grained American oak barrels for 12 months.
Each barrel is then painstakingly assessed. The finest are selected to age further and comprise the final blend. The wine is made only in exceptional years and in very small quantities.
Deep crimson red, Taylors The Pioneer Shiraz has luxurious layers of berry flavours, fruitcake spices and velvety tannins leading to a lingering finish. Cellaring potential is 20 years.
